ガストロノミー国東は、大分県国東市の古民家宿「かなめ」敷地内の築100年納屋を改修し、滞在型ガストロノミーツーリズム拠点を創出。 県内12名の料理人が月替わりで、椎茸、カボス、太刀魚等の地元食材を使った和食、イタリアン、マクロビなどの創作料理を提供します。 各メニューは食材の産地や神仏習合文化の背景を解説し、「ストーリーある食」で記憶に残る体験を創出し、地元農家と連携した旬の野菜・カボス収穫とプロ指導の調理体験を月2～3回実施し、「採る・作る・食べる・学ぶ」を体験できます。
Gastronomy Kunisaki has created a stay-type gastronomic tourism base by renovating a 100-year-old barn on the grounds of the traditional Japanese inn “Kaname” in Kunisaki City, Oita Prefecture. Twelve chefs from within the prefecture take turns each month to offer creative dishes using local ingredients like shiitake mushrooms, kabosu citrus, and cutlass fish, featuring Japanese, Italian, and macrobiotic cuisine. Each menu explains the ingredients' origins and the background of Shinto-Buddhist syncretism, creating memorable experiences through “story-rich dining.” In collaboration with local farmers, seasonal vegetable and kabosu harvesting sessions and cooking experiences with professional guidance are held 2-3 times per month, allowing guests to experience “harvesting, making, eating, and learning.”

This initiative is a resident-participation experiential program utilizing local resources. Supported by the Japan Tourism Agency, it operates from traditional farmhouses, sharing local culture and daily life with visitors.
This inn plays a key role in this project, deeply connected to the community and growing as a place where tradition and the future intersect. Staying at the inn itself becomes an experience that supports the region and connects guests with its culture. We have been offering this new form of stay.
